Capriotti’s is a versatile concept that can operate in many different city and suburban locations:
- Capriotti’s can be end-caps, inline, or freestanding
- The brand is open to nontraditional locations, such as airports, casinos, and stadiums.
- The average size of a Capriotti’s is 1,400-1,600 square feet
- Open kitchen design and modern, attractive finishes convey the fact that our food is fresh, made in-house, and made to order
- Seating averages 30
Capriotti’s does not use a set “cookie-cutter” layout for kitchens, although the brand strives to limit it and other back-of-the-house operations to 900 square feet to maximize space for guest seating. The same kitchen equipment is used system-wide. Our shops feature a mixture of modern design elements that provide a warm, inviting feeling.

What Capriotti’s Sandwich Shop is generally looking for in demographics* and site requirements:
- Daytime Population – 50,000+ daytime workers in a 3-mile ring
- Total Population – Overall population in the trade area of 75,000+
- Median Income – Above average median income ($60,000+) in the trade area
- Traffic Count – 35k+ vehicles per day on the main artery

- Daytime Population Centers – Heavy concentration of daytime/work population, strong retail, some residential population
- Co-tenancy – Anchored centers, power centers, office supply and home improvement users, full price retailers, other fast casual and comparable QSR’s are a plus
- Size – 1,400 to 1,600 square feet
- Frontage – 22’ Recommended minimum
- Parking – 10 spots per 1000 square feet
- Power – 400 AMP 120/208 three phase or 120/208 single phase in the store
- HVAC – One ton of HVAC per 150 square feet
